&Company :: Roasted Garlic & Tomato Guac
The lovely ladies of &Company have sent us another delightful recipe ::
In honor of St. Patrick’s Day and all things green that go along, we decided to send you something green! It’s guacamole, but not just any guac…like really good guac with feta cheese. Because feta makes everything better. Hope you like it!!
Roasted Garlic & Tomato Guac with Goats Milk Feta
- 2 avocados
- Juice of 1 lime
- 2-3 cloves garlic
- 1 medium tomato
- 1T goats milk feta, whipped
- Cilantro optional
- Salt to taste
- Preheat oven to 425. Quarter the tomato, and cut the ends off of the garlic cloves. Roast for 30-40 minutes.
- Pit avocados, combine them in a large mixing bowl with lime juice, feta, cilantro and salt.
- Remove tomatoes and garlic from the oven. Peel the garlic and mince, dice the tomatoes, then add them both to the avocado mixture. Mash with fork or wooden spoon until smooth.
- Dip yo chips!
